Observation (CORRECTED DURING INSPECTION): Raw potentially hazardous foods observed stored above ready to eat foods in the stand up coolers and undercounter prep cooler. Operator relocated raw potentially hazardous foods below ready to eat foods during the inspection.
Corrective Action(s): Always store raw potentially hazardous foods below ready to eat foods to prevent cross contamination.

Observation: Cardboard observed on the floor in the kitchen.
Corrective Action(s): Remove cardboard as it cannot be properly cleaned. Reccomend using washable non-slip mats.

Monitoring logs observed to be maintained.
***Ensure time tracking is in place for foods held at room temperature. Unsold foods are to be discarded after 2 hours.
***Ensure inserts are not double stacked in the top portion of the prep cooler. This will help ensure cold potentially hazardous foods are properly cold held.
Dishwasher final rinse cycle measured at approximately 100ppm. Wash water temperature at 118F. Both stoppers observed on-site for the 2 compartment sink.
QUATS sanitizer bottles measured at 400ppm. Ensure prepared solution is 200-300ppm. Test strips on-site to verify concentration.
New hot holding installed in kitchen. Unit measured at above 60C.
Miso soup being hot held above 60C.
Prep coolers and upright coolers operating at below 4C.
Freezers operating at below -18C.
No pest issues observed.
