Observation (CORRECTED DURING INSPECTION): The cooked rice (for back up) stored in the pot on top of the portable hot burner is not hot enough. Temperature of 114F/46C was recorded.
Corrective Action(s): The rice is being reheated on the burner. Ensure that it reaches 165F. Check with your thermometer. Then keep hot at 140F/60C or hotter.

Observation: Hard to reach areas are not cleaned (i.e., in the dry storage room). Grease from the portable fryer stored on the wire rack shelf was dripping down on items below.

All donair cones were rotating and being cooked with elements on. Meats are shaved and cooked on the flat top before storing on the steam table.
Temperature of the steam table is satisfactory.
Probe thermometer and IR thermometers are available.
