- High temp dishwasher reached >71C at plate's surface
- Temperatures of all refrigeration units are adequate (<4C coolers, <-18C freezers)
- Temperature log for refrigeration units & high temp dishwasher is in place
- Foods are stored off of floor & properly covered
- Ice machine is maintained in a sanitary manner
- No pest activity observed at the time of inspection
- Proper thawing practice is followed

- Remove all cardboard boxes lining the shelves & rack. They are not approved food contact surfaces. Shelves & racks need to be scrubbed for cleaning & sanitized when they become soiled.
