302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Spray bottle labelled "bleach" contained >> 200 ppm chlorine residual.
Corrective Action(s): Spray bottle was diluted at time of inspection to 200 ppm. Ensure that spray bottles containing bleach have no more than 200 ppm (1 tsp household bleach per litre of water). Concentrations above 200 ppm are no longer food grade and may result in chemical contamination if used on food contact surfaces.

304 - Premises not free of pests [s. 26(a)]
Observation (CORRECTED DURING INSPECTION): Significant amount of rodent droppings observed in the following areas:
1. On the floor of the front corner of the kitchen near the hot-holding area, behind the mechanical trap.
2. Behind the freezer unit outside the main kitchen area.
3. Along the walls and corners of the equipment box at the end of the dining area.
Corrective Action(s): Rodent droppings were saturated with a 1:10 dilution of unscented household bleach, then left for 20 minutes. Droppings were then discarded at time of inspection. Contact professional pest control company for further monitoring and direction.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Following areas need to be addressed:
1. Ventilation canopy has an accumulation of grease.
2. Area underneath hot-holding area contains dark-coloured grime.
Corrective Action(s): 1. Remove the ventilation slats and properly clean them according to manufacturer's instructions. Do not wait for professional cleaning and degreasing, as it only occurs every 6 months.
2. Remove the grime and ensure that this area is maintained in good sanitary condition to prevent attraction of pests.

Comments

Routine inspection conducted. Kitchen was not in operation at time of inspection. The following observations were made:

1. Temperatures
- Walk-in cooler at 3C
- Stand-up freezer at -20C
- No hot-holding at time of inspection (Reminder: Please monitor temperatures during hot-holding to ensure that hot-held items are maintained at or above 60C)

2. Hygiene and Sanitizing
- Handwash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Utensils, sieves, ladles, large pots are maintained and stored in sanitary condition. Oversize pots are cleaned in designated pot washing area
- Dough mixer machine in sanitary condition
- High-temperature dishwasher sanitizes at 72.9C at the plate (final rinse) - Min: 71C

3. Storage
- All food items are elevated at least 6" off floor. Please ensure that it remains this way to prevent contamination and to ensure that floors can be easily mopped
- Minimal food items were on premise at time of inspection. Ingredients were in original containers, dry storage goods were in bins with tight-fitting lids
- Dry storage room is well maintained

4. Pest Control
- Company contracts professional pest control company to conduct routine audits. Last inspection conducted June 12, 2018 (yesterday) did not indicate any signs of rodent activity. This is contrary to what was observed at time of inspection today, as numerous rodent droppings were found (see violation code 304 above)
