Comments

A routine inspection was conducted, the following observations were made: - Coolers were 4C; freezers were -14C or colder; thermometers present; and temperature recorded daily. - Handsinks stocked with liquid soap, paper towels, and running hot and cold water. - Quats sanitizer in spray bottle was 200ppm. - Prairie section, domestic dishwasher had Sani-Rinse cycle engaged by the operator. Ensure to retrain staff to select the "Sani-Rinse" setting during the rinse cycle so dishes are being sanitized. The duration/time the dishwasher runs does NOT determine if dishes are sanitized. - Holly section, domestic dishwasher was not in operating at time of the inspection. - General sanitation level is good. - No signs of pests. - FoodSafe certified staff present. - All foods stored in food grade containers; covered; labeled; date coded; and stored 6" off the floor on shelves.
