Routine Inspection conducted with the presence of the kitchen manager.

General:
- General sanitation was satisfactory.
- Staff present good hygiene. Food service worker was observed washing hands prior to serve students.
- Hand washing stations fully equipped with hot and cold running water, liquid soap, and paper towel.
- No signs of pests during time of inspection.
- Quats sanitizer in use for food contact surfaces is DDBSA, measuerd at 272-700 DDSBA. Test strip expired June 2022.
- Meat slicer and can opener were in a sanitary condition.
- Scoop stored in Ice machine without contact with ice.

Temperatures:
- High-temperature dishwasher reached 80.6 C at plate level.
- Walk-in cooler at 2.0'C; Under the counter cooler and display cooler < 4C
- 2 upright freezers temperature bolow -20 C
- 2 pizza Hot-holding > 65 C. Meat ball and sauce > 60 C.
- Staff use cooling wand to chill cooked tomato sauce- Excellent!

Storage:
- All foods stored 6 inches off the floor either in original package or covered with lids.
- No expired food observed during inspection.
- Meats stored away from vegetables and on the bottom shelves.
- Utensils stored in a sanitary manner with handles towards users.

Note: (1) Replace the expired Ecolab test strip.
(2) To prevent slime built up in ice machine, either to take off the plastic board to clean or dump ice and clean the plastic board.
