Observation (CORRECTED DURING INSPECTION): Pink mildew noted on the plastic drop plate in the ice machine.
Corrective Action(s): **Issue corrected at the time of inspection**
Staff cleaned and sanitized the plastic drop plate in the ice machine as soon as this issue was pointed out to them. As per staff, they will emptied out the ice machine and do a deep cleaning and sanitation tomorrow evening.
Follow the cleaning frequency suggested for the ice machine as per your Sanitation Plan to maintain this equipment in a sanitary condition at all time.

Observation (CORRECTED DURING INSPECTION): Missing paper towel by the handwash station in the cookline.
Corrective Action(s): **Issue corrected at the time of inspection** Staff placed a roll of paper towel by the handwash station in the cookline.
All handwash stations must be fully stocked with soap and paper towel at all time. Ensure paper towel is protected and stored within a proper dispenser.

Observation: 1. 2 light fixtures above the staff locker areas are noted exposed, with no protective sleeves or shields over the fixtures.
2. Two containers of frozen food (burger and shrimp patties) stored unprotected, no lids or wraps, in the upright freezer beside the walk-in cooler.
Corrective Action(s): 1. Install protective sleeves or shields over the exposed fixtures in the event of accidental light bulb breakage, this prevents shards from contaminating the food contact items store below.

Observation: Side kitchen door propped open during the inspection. No screen door is installed at this door.
Corrective Action(s): **Note: This is a repeated violation**
As per the last follow-up inspection, the Manager mentioned that the screen door has been purchased but was waiting to be installed. However, the screen door has still not been installed. Install the screen door or keep this door closed to prevent pest from entering into the building. Repeated violation may result in progressive enforcement actions.

Observation: 1. Dust noted on the wall and ceiling by the upright cooler and by the fume hood of the cookline.
2. Grease and dust noted on the fume hood (as per cleaning tag, due for cleaning on Oct 18, 2022).
3. Debris noted on the floor in the server area, by the Coorslite cooler.
4. Dust noted on the ceiling in the dishwashing area.
5. Debris noted on the floor below the utensils and dishwares storage rack in the dishwashing area.
6. Buildup noted on the "dirty side" curtain of the bar dishwashing machine.
Corrective Action(s): Clean and sanitize the aforementioned areas and maintain in a sanitary condition at all time.

Observation: Noted a yellow chemical being stored in a spray bottle labeled for QUAT (the yellow chemical is NOT QUAT).
Corrective Action(s): Discard the yellow chemical with the improper name label.
All chemicals must be placed in the appropriate bottle with proper name label to clearly identify their content to avoid confusion of the content. Also, mixing chemicals may release toxic byproducts that may be hazardous to staff.

Observation: Cardboard noted being used as liners for dry storage rack - at the start of cookline.
Corrective Action(s): Remove cardboard and use appropriate liners, ones that are imprevious to moisture, non-absorbent and easily cleanable.

Observation: Noted a cell phone was left on the prep cooler cutting board during the inspection.

Routine inspection conducted today:
Handwash stations (except for the one station noted in violation 401), including washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4C or below.
All freezer units were at -18C or below.
Hot hold unit was holding food above 60C.
Proper scoops with handles were used in bulk food containers. Handles were not in contact with the food.
200 ppm QUAT detected in the sanitizer spray bottles available in the kitchen area.
100 ppm chlorine residual detected in the low temperature dish machine.
12.5 ppm iodine residual detected in the bar low temperature dish machine.
Deep fryer and meat slicer were noted in a sanitary condition.
No signs of pest activities noted during the inspection.
Reviewed the latest complaint received with the person in charge. Did not observe any foreign substances in the food currently in the kitchen. No further follow-up required.
A staff onsite has FoodSafe level 1 certificate available and verified.
