Corrective Action(s): Fill sanitizing buckets with 200 ppm quats sanitizer. Clean and sanitize all food contact surfaces in the kitchen.

Observation (CORRECTED DURING INSPECTION): Basin of the hand washing station close to the coffee maker had cups and plates left inside.
Corrective Action(s): Do not leave and remove any plates and utensils in the hand washing station. Every hand washing station must be free of obstruction at all times.

Observation: Cut lettuces stored in the walk-in cooler were covered with a reusable cloth.
Corrective Action(s): Remove the cloth and cover the lettuces with a food-grade cover such as saran wrap. Cloth is made from porous material and can not be cleaned and sanitized properly. Correct by: immediately.

Routine inspection:
- Walk-in cooler at 3C.
- Walk-in freezer at -18C.
- Potato and sausages hot held above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quats sanitizer available from the dispenser.
- Low temperature dishwasher dispensed 100 ppm bleach at plate level.
- Deli slicer and ice machine maintained in sanitary condition.
- General sanitation satisfactory.
- No pest activities observed at the time.
