2) Very large box of meat being portioned into bags to go in the freezer, however when i arrived everyone was outside and no one was working on the meat and it was sitting at room temperature)

-prep cooler and bar fridge now at 4C
-temps are now being monitored with a page on the front of each cooler and a thermometer is inside each
-all cleaning has bee done
-no food out at room temperature cooling or thawing. Remember cooling needs to be done in small shallow containers from 60C to 20C in 2 hours and from 20C to 4C in 4 hours
-bleach spray bottle available in kitchen

**owners on site who have FOODSAFE, staff to take FOODSAFE by June 15 and certificate or confirmation of successful completion to be submitted to EHO by June 16

**Due to over crowding of kitchen, suggestions was made to remove the staff washroom and turn into a storage room, or other option is to reduce the menu
