Observation (CORRECTED DURING INSPECTION): Implements being stored with food debris on items. (ie: knives under dishwash sink) Items not stored in a sanitary manner. Wiping cloth storage not acceptable. Too many cloths noted.
Corrective Action(s): Ensure all food contact surfaces are being washed and disinfected after use. All items are to be stored in a sanitary manner. Wiping cloths, used on food contact surfaces, are to be stored in a sanitizer at all times.

Observation: Rodent dropping noted behind and under equipment - freezers, etc.
Corrective Action(s): Clean all areas. Establish a rodent control program by hiring a certified pest control company in order to provide advice. Effort is required to be made to seal entry points - ceiling hole/baseboard behind walk in cooler.

Observation: Food/debris noted behind/under equipment, on lower shelves, etc. Storage shelves unorganized.
Corrective Action(s): Clean and organize facility. Ensure all items are pulled away from the walls. Remove any unused items to free up space. Store all items in designated areas.

Comments

To prevent pests from entering the food premises.Follow these points:
- Keep doors and windows closed or install screens
- Seal or patch any holes or potential entry points on the exterior of the building
- Install weather-stripping underneath exterior doors
To prevent pests from hiding or breeding in the premises.Clean floors routinely especially underneath and behind all equipment. Seal gaps behind sinks and walls.

Note: Increased sanitation is part of an effective rodent control program!
