-Follow-up inspection to Aug 23, 2017.
-3-compartment sink was properly prepared with 100ppm bleach sanitizer solution. Manual warewashing signage provided for operator. Sink must be prepared with 100ppm chlorine sanitizer while facility is in operation.
-Sanitizer pail by the chicken rotisserie was tested at 200ppm.
-Both handwash stations were easily accessible and supplied with hot and cold running water, liquid hand soap, and single use cloth towels. Staff were observed properly changing single use gloves.
-Rotisserie is cleaned and sanitized at the end of the night. Did not see old food debris inside the machine at the time of inspection.
-Hot holding of chicken was greater than 60C.
