A routine inspection was completed:
- Coolers 4C or colder; hot holding units (butter) above 60C; thermometers present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in 3-comp sink and spray bottles had 200ppm strength. Valid test strips present.
- High temperature dishwasher had a rinse cycle temperature of 73.7C at the plate's surface, as per max/min thermometer.
- General sanitation level is good. Sanitation level has been maintained, good work.
- Exhaust canopy and filters are clean. Professional cleaning was done in October 2023, next service due in April 2024 as per service sticker.
- All foods stored in food grade containers; covered; labelled; date coded (MRD stickers); foods stored in groups; and foods stored 6" off the floor on racks and pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- Valid FoodSafe certified staff present.
- No signs of pests. Contract with a professional pest company in place to monitor and eliminate pests.
- 3-comp sink drain pipes have been fixed and no longer leak.
- The u/c cooler storing dips, in the front concession area, is 4C and the door gaskets have a tight seal.
- The upright, white cooler beside the 3-comp sink is no longer in use.
NOTE
- The high temperature dishwasher is still leaking, but a work order has been placed to have it serviced and fixed. The leaking dishwasher is creating a damp environment with the pooling water, and is encouraging flies to breed.
- A work order has been placed to repair the walls in the candy room and pop syrup room.
- Remove all items off the floor, under the shelves holding the pop syrup, as there is accumulated syrup on the floor that needs cleaning.
- Place baking sheets under all shelves holding pop syrup to it can catch any leaking/dripping syrup. At the end of each day, staff must place the baking sheets in the dishwasher to remove the collected syrup. Place clean and sanitized baking sheets under the shelves before leaving to catch any leaks/drips. |
