Observation:
The exhaust canopy has not been professionally cleaned since opening, grease and food debris will accumulate and create a fire hazard. The exhaust filters have accumulated dust and grease on them, which can fall into food.
Corrective Action(s):
Call a professional cleaning company to clean the exhaust canopies and filters, and ensure this is done on a routine basis. The exhaust filters shall be cleaned by staff, between professional cleanings, to remove built up grease and dust.

Observation:
The waste pipe under the 3-compartment sink, beside the stove top, is leaking. Water is pooling in a bucket and this will attract pests. Owner was aware of the leak and has contacted a plumber.
Corrective Action(s):
Repair or replace the pipe or seals so water no longer leaks. Empty the bucket every night until the leak is fixed.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -19C or colder; thermometers present; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Manual dishwashing being done. Soap and bleach present for washing and sanitizing.
- Bleach sanitizer in spray bottle had [Cl2] above 200ppm. The chlorine bleached the color out of the test strips. You may wish to decrease the amount the bleach added to water, so the [Cl2] is between 100-200ppm.
- General sanitation level is good. No signs of pests.
- FoodSafe certified staff present.
- All food stored in food grade container; covered/sealed; in groups with proteins on separate or lowest shelves below RTE foods; and 6" off the floor on shelves or racks.
- No expired foods in use. FIFO rules being followed.
- All repairs and outstanding violations have been addressed.
