Observation: Hand sink used for washing coffee urns and filters. Sink plugs for 3 compartment sink missing.
Corrective Action(s): Obtain sink plugs immediately in order to properly carry out manual dishwashing. Coffee urns and filters to be washed and sanitized in 3-compartment sink. Until plugs are obtained, use large containers in the 3-compartment sink for holding water/sanitizer solution.
Discussed with staff how to properly sanitize using bleach (1 tbsp of 5% bleach per gallon of water).
Correct immediately.
