Observation: Observed dough flattener for naan bread on the prep table located on the main balcony kitchen with initial wrapping on. It had been used but not yet cleaned and/or sanitized. Observed remains of flour and dried up dough on the machine. It was not in use at the time of inspection. On the opposite side of the prep table, there were used cutting board and a knife that were not cleaned nor sanitized. All utensils and equipment must be cleaned and sanitized immediately
Corrective Action(s): Required operator to remove the wrapping, clean and sanitize the dough machine. Cutting board and knife are to be brought into the kitchen for cleaning and sanitizing. Ensure that all utensils when not in use, are cleaned and sanitized.

Observation (CORRECTED DURING INSPECTION): 1. Observed dried goods scoops stored with food, handle directly touching food products.
2. Ice scoop stored in ice bin on the right, handle directly touching the ice
Corrective Action(s): Required operator to remove the scoops, clean and sanitize, then store them in a clean and sanitized container when not in use. Scoops for the dried products are to be hung on built-in holder. Scoops were removed, and hung on the holders at the time of inspection.

-Overall sanitation is satisfactory
-Hand washing stations are stocked with liquid soap and paper towel
-Hot and cold running water available at all sinks
-All coolers at 4 C or lower; all freezers at -18 C or lower; hot held foods on the stove at 60 C or higher
-High temperature dishwasher in good working order; detected 72 C at plate level after final rinse cycle
-Dry storage, clean plates/utensils storage satisfactory. Noted large pots stored on the floor along the hallway. When inquired, staff informed that storage area is currently under re-organization. Once completed, they will be stored properly once cleaned and sanitized.
-QUAT sanitizer dispenser in good working order; detected 200 ppm of QUAT. Regular and frequent cleaning should be conducted; before and after use.
-Colour coded cutting boards are used
-Ice machine maintained in sanitary condition
-Washrooms maintained in sanitary condition
-No sign of pests noted at the time of inspection
