Observation (CORRECTED DURING INSPECTION): Bags of food in dry storage room observed with potential rodent chew marks.
Corrective Action(s): The following items were discarded:
- 1 bag chocolate chips
- 1 bag dry noodles
- 1 10 kg bag flour
- 2 40 lb bags rice
Note: Other food is stored in pest resistant containers with lids. No signs of contamination. Exterior of containers cleaned and sanitized during inspection. Going forward, ensure all dry storage food items stored in pest proof containers (e.g. pest proof containers with tight fitting lids). Operator obtained additional storage bins with lids at time of inspection.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Rodent droppings observed in some equipment and utensil storage areas.
Corrective Action(s): Utensils and equipment removed to be rewashed and sanitized. Tables/shelves were cleaned and sanitized during inspection. Ensure equipment and utensils are stored in sanitary condition in order to protect food from potential contamination.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): One bottle labeled quats sanitizer had 100 ppm quats; a second bottle which was also labeled as quats sanitizer had no detectable quats.
Corrective Action(s): Bottles emptied, refilled at dispenser, and measured 200 ppm quats. Ensure sanitizer is maintained at concentrations required for safe and effective sanitizing of food contact surfaces (e.g. 200 ppm quats).

Observation (CORRECTED DURING INSPECTION): Aluminum foil observed lining wire rack in left prep cooler (at cook line). Foil is showing signs of deterioration.
Corrective Action(s): Aluminum foil removed as pieces of foil may potentially contaminate food below and it may potentially impede air flow. Discontinue this practice.

Observation: Rodent droppings observed in dry storage areas (dry food and utensil storage).
In addition, droppings observed on floor in areas (under dishwasher, in hot water tank room).
Corrective Action(s): Staff and operator cleaned and sanitized storage tables at time of inspection. Equipment and utensils that were stored in affected areas were washed and sanitized. It was stated that a pest control technician services the premises; however, operator unable to provide most recent pest control report. Have premises re-serviced and provide a copy of the report to the Environmental Health Officer. Date to be corrected by: July 25, 2023.

Observation: 1. Some holes/gaps observed in hot water tank room and on electrical panel wall. In addition, some holes/gaps observed in ceiling tiles in the same area. One floor drain is lacking a cover.
2. Build up of oil on ventilation canopy.
Corrective Action(s): 1. Ensure all potential pest entry points are properly sealed to exclude pest entry. Identify and seal additional potential pest entry points found upon service by pest control technician. Date to be corrected by: July 27, 2023.
2. Ensure ventilation canopy is properly cleaned and sanitized. Oil / grease is a potential pest attractant. Date to be corrected by: July 27, 2023.

Freezers at -18 degrees C or less.
Hot holding internal food temperatures at 60 degrees C or more.
Raw and ready-to-eat items in coolers properly organized. Portioned items are dated and covered.
Handwashing stations supplied with hot and cold running water, liquid soap, and paper towels.
High temperature dishwasher measured 77 degrees C at the utensil surface during the final rinse (minimum required: 71 degrees C or more).
Bar glasswasher measured 12.5 to 25 ppm iodine sanitizer at the utensil surface during the final rinse (required: 12.5 to 25 ppm iodine).
Restaurant is advertising buffet services (added since previous routine health inspection). Discussed buffet procedures. Operator to submit an updated food safety plan to the Environmental Health Officer by July 31, 2023.
