Observation (CORRECTED DURING INSPECTION): Calamari (raw) is being defrosted in dishwashing sink with dirty dishes nearby.
Corrective Action(s): Calamari must be protected from contamination from chemicals and sources of contamination. Dishwashing sink is not to be used as a food preparation sink. Operator to provide written instructions for calamari food handling procedures.

Corrective Action(s): Provide written instructions for staff (food safety plans) for defrosting calamari, hot holding, cooling hot foods (such as soups), etc.

Observation: There is a black residue on the wall behind the dishwasher.
Corrective Action(s): Provide written cleaning schedule and sanitation plan. Include cleaning frequencies for walls, floors, etc. Post poster for wash, rinse, sanitize (1 tsp bleach in 1 litre of plain water), and air drying food contact surfaces and wiping cloths.

Follow up inspection.
Repeat violations for 209, 212, and 306- see above.
Staff advised that they are using chlorine bleach sanitizer to sanitize the wiping cloths. Do not mix the bleach with detergent. Wash, rinse, sanitize and air dry. Today, chlorine added at 200ppm.
Wooden board on top of the oven has been removed.
Hand delivered letter dated June 25/18 regarding food permit.
Provided card regarding Food Safe refresher course. Those who have taken the course prior to July 2013 will require the refresher course. Food Safe expires after 5 years.
