Observation (CORRECTED DURING INSPECTION): Soup (and gravy) in center hot holding unit less than 60 C.
Corrective Action(s): Ensure all liquid hot held food get proposed re-heated to 74 C prior to placement in hot holding units at 60 C. Staff filled reservoir a bit more to promote better temperature exchange and the product in question was re-heated.

Comments

Floor in kitchen (and in bar) deteriorating and becoming difficult to maintain good sanitation practices as observed in several areas (pictures). Informed by staff a complete renovation is planned early in the new year. Great news! Please submit plans to Langley Health Protection office for review.

General cooling practices very good. Cooling units all keeping below 4 C.
Dishwasher good (75 to 100 ppm chlorine) and quats well distributed throughout facility (buckets and spray bottles) and measuring 200 ppm.
Good handwashing facilities throughout.
