Observation (CORRECTED DURING INSPECTION): Paper towels missing in the front dispenser.
Corrective Action(s): The operator restocked the dispenser with paper towels. Ensure that all handwashing stations are fully supplied with soap and paper towels at all times to wash hands.

Observation (CORRECTED DURING INSPECTION): There was a sizeable gap at the bottom of the back door. The door was not fully closed.
Corrective Action(s): Keep this door fully closed at all times to prevent entry of pests.

Comments

- General sanitation is good.
- All other handwashing stations supplied with hot/cold running water, soap, and paper towels.
- All coolers (display, undercounter) at < or = to 4C.
- All freezers (display, ice, undercounter) at < or = to -18C.
- Hot holding units at > or = 60C. Squeeze guards installed.
- Pastry cabinet looks in sanitary condition. The handles of the tongs were not touching the food items.
- Three compartment sink available for manual dishwashing. Sanitizer available at 200ppm Quat solution. Test strips available to monitor the Quat concentration.
- Surface sanitizer available in spray bottles at 200ppm Quat solution. Ensure to have surface sanitizers available at the front serving area and use clean wiping cloths.
- Dry storage area has adequate space and wire racks. Most dry food items stored inside plastic bins with lids. .
- No signs of pest activity.
- Polyethylene gloves worn by staff.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.
