Observation: - Debris and grime noted along edge of floor under prep tables and handsink in front of premises.
- Debris, hair noted to be collecting along edges/corners of floor in back of premises
Corrective Action(s): - Pull out moveable equipment and scrub floor to remove all grime and debris in front of premises.
- Clean along all edges/corners of floor in back of premises. Ensure these areas are being cleaned thoroughly and frequently enough to prevent debris and grime from accumulating. To be corrected by: 05-Dec-2023

Observation: - Wire shelving unit used to store clean dishes has a rusted surface. Rust noted to be transferring to food storage containers.
Corrective Action(s): - Replace shelving unit. Finish/surface must be impervious, smooth and washable. In the interim, do not store dishes on sections which are not rusted or alternate shelving unit. To be corrected by: 12-Dec-2023
Note: Staff reported a new shelving rack has been ordered, but has not yet arrived.

Comments

- Overall sanitation was satisfactory aside from hard to reach areas of the floor.
- Handwashing sinks were supplied with liquid soap and paper towel
- Coolers were operating at 4C or colder and equipped with thermometers
- Freezer was maintaining product in a frozen state.
- Temperatures are monitored. Records were up to date.
- Time tracking in place for cooked pearls held at room temperature. Each container was labelled with time to discard. (after 2 hours)
- High temperature dishwasher was operational and met required sanitizing temperature. 71C at dish (checked with thermolabel)
- In use wiping cloths were kept in bleach sanitizer solution. Concentration measured 100ppm chlorine.
- Reviewed cleaning and sanitizing requirement for in use pitchers, spoons - to be cleaned and sanitized at least every 4 hours. Staff reported these items are typically cleaned in the dishwasher after 1 hour in use.
- Ice machine appeared clean and maintained. Ice scoops were store in a sanitary manner.
- Foodsafe requirement met at the time of the inspection. Viewed valid certificate for staff on duty at time of inspection.
- Staff and public washrooms were supplied with liquid soap and air dryers.
- No signs of pest infestation noted at the time of the inspection. Pest control contract in place with service every three months.

Note: Valid decal for health permit to operate is currently affixed to business licence. Decal should be affixed to health permit. Locate health permit and post in visible location. If it cannot be located, complete and submit form to request a replacement permit. Form provided.
