Observation (CORRECTED DURING INSPECTION): Mice droppings observed in various areas of the premises, along the base of walls, on the floor. Mice carry diseases and will spread them as the walk on surfaces. Owner indicated she recently hired a pest company to rid of them. Tin traps present
ACTION: Clean up the droppings and sanitize the surfaces with bleach.
Follow all recommendations made by the pest technician.

Observation: Founds openings and holes in walls, corners, and a space/opening under the back door.
Improper materials have been used to block the holes (tape, aluminum foil, cardboard), mice will chew through them.
ACTION: Block all openings/holes with sheets of metal; or tightly pack with steel wool.
Install new door guards on the base of all exterior doors.

Observation: 1. Aluminum foil found covering lower shelves.
The foil is changed weekly. Foil is not cleanable or durable. Spilt food will attract pests.
2. Protective plastic found covering a deep fryer and the lower shelf of cooking equipment.
This plastic can't be washed properly, which will then attract pests.
ACTION: stop using foil to cover shelves, OR change the foil every night.
Peel off the protective plastic so it exposes the stainless steel underneath which is cleanable.

Routine inspection completed due to ownership change:
- Coolers 4 degrees Celsius or colder; Freezers -18 degrees Celsius; hot holding units above 60 degrees Celsius; and thermometers present.
- Handwashing sinks stocked w/ liquid soap, paper towels, and running hot + cold water.
- Low temp. dishwasher had [Cl2] between 50-100 ppm concentration, during the rinse cycle.
- Bleach sanitize in spray bottles and buckets of wiping cloths had [Cl2] of 200 ppm.
- Foods stored in food grade containers; covered; foods stored in groups; and foods stored 6" off the floor on shelves + racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- Exhaust canopy and filters are clean. Next service due in Sept. 2022.
- Yearly health permit fees paid via cheque (#30).
- All equipment + surfaces in good working order.
- Permit to operate granted.
