Observation (CORRECTED DURING INSPECTION): High Temperature dishwasher was borderline; thermometer showed 70.5 Celsius at plate level and thermolabel showed that dishwasher did not quite reach 71 Celsius at plate level.
Corrective Action(s): Dishwasher is only used twice per year. Hot water tank can be turned up for events where dishwasher is required to raise the dishwasher temp enough for sanitizing.
