Observation (CORRECTED DURING INSPECTION): Operator placed food in warming unit while it was warming up until she had time to reheat and food was 30-40C. Pulled meat. This is not best practice as most pathogens grow between 30-40C.
Corrective Action(s): Heat and reheat foods to 74C as quickly as possible. Do not use warming unit to store. Preheat warming unit to 60C before placing food inside. Use a thermometer to check temperature for both.
