Observation: Samosas in the hot holding unit at 24.5 C.
Correction: Immediately. Remove samosas from the hot holding unit; and discard samosas.

Observation: 10 samosas (6 vegy and 4 chicken) was in the front display hot holding units at
Correction: Immediately. Remove all samosas from the display case.
First, approval must be granted to serve a ready to eat food.
Comments

Small front freezer is empty and turned off.
Back area has been cleaned.
Staff washroom supplied with liquid soap and paper towel; hot & cold running water.
Not Holding unit is turned off (no potentially hazardous food in the case).
Ice-cream freezers - satisfactory.

Note: Wooden display shelves in the customer area for fruits and vegetables have been constructed (and still in progress).
Ensure that bare wood display shelves are painted (must be easy to clean and sanitize).

Recommendation:
- The walk-in cooler is not working well (temperature is "jumping" and inconsistent); please monitor the temperature of the walk-in cooler; it must be <=4.0 C; adjust temperature of the walk-in cooler; service; or repair it.
Note: Be inform that if temperature of the walk-in cooler is going to be > 4.0 C a correction order possibly be issued and all potentially hazardous food will be discarded.
- Continue to clean the back area (all food must be stored off the floor); and not related to the business items have to be removed from the store.
