Observation (CORRECTED DURING INSPECTION): Several pizza slices in the hot holding unit were<60 deg C.
1) Pepperoni slices and meat lovers slices on top rack at 52 deg C
2) Pepperoni slices on bottom rack at 49 deg C.
Corrective Action(s): All pizza slices in top and bottom rack of hot holding unit were discarded.
As discussed with staff member, the hot holding unit must be able to keep pizza slices at >60 deg C. Alternatively, pizza slices that are at <60 deg C must be used up or discarded within 2 hours and there must be written time tracking to verify what time the pizza slices were put into the unit if you are not planning to have the food at >60 deg C.

Observation (CORRECTED DURING INSPECTION): Surface sanitizer in spray bottle had 0 ppm chlorine residual.
Corrective Action(s): Staff member prepared proper bleach solution after being notified. Use 1/2 tsp bleach per 1 liter of water. After preparation, bleach solution was at 100 ppm chlorine residual.

Observation: Food items in chest freezer at -12 deg C. This is because the lid is not intact so cold air is escaping.
Corrective Action(s): See code violation 308 regarding repair or replacement of this freezer.

Observation: Pizza oven conveyor belt (top one) is not being kept clean , it has large buildup of debris underneath the rack in the tray.

**Correction order has been issued for the the chest freezer and for lack of FoodSafe certified staff onsite. Follow up inspection to be conducted on ALL of the above mentioned violations**
