Observation (CORRECTED DURING INSPECTION): No QUATS sanitizer prepared upon start of inspection. Staff was observed preparing solution during inspection. QUATS sanitizer measured at 200 ppm concentration.
Corrective Action(s): Prepare QUATS sanitizer at a strength of 200 ppm in designated color-coordinated pail. Ensure the sanitizer strength is checked frequently with the available QUATS strips and that wiping cloths are changed frequently to prevent loss of sanitizer strength and to ensure surfaces are being effectively sanitized.

1. Temperatures:
- Walk-in cooler at 1'C
- Walk-in freezer at -19'C
- Sandwich cooler at 4'C (top) and 3'C (bottom)
- Under-counter prep freezer (wing station) at -19'C
- Beverage cooler in service area at 3'C
- Ice cream display freezer at front at -19'C
- Hot-holding unit measured at >60'C
- Temperature logs maintained and available on premises

2. Sanitation:
- General sanitation of premises satisfactory
- Hand washing stations in pizza prep area and staff washroom supplied with liquid soap, paper towel, hot and cold running water
- Chemical dishwasher measured at 100 ppm chlorine concentration with test strip
- 3-compartment sink available with drain plugs
- QUATS dispenser at 3-compartment sink measured at 200 ppm with test strip
- Grease trap last serviced in Sept 2021

3. Storage:
- All food observed covered
- All food observed stored at least 6 inches off the floor
- Chemicals stored separate from food

4. Pests:
- No signs of pests during inspection
- Pest control company contracted to complete inspections two times per month. Pest inspection reports reviewed during inspection and no recent issues reported.

5. Administration:
- Operating permit visible during inspection
