Observation: Observed some droppings aruond the areas where traps have been set up (ie. behind the fridges in the kitchen and under the shelves in the dry storage area)
Corrective Action(s): Clean and sanitize the areas where droppings are found. Keep up with storing foods in pest-proof containers and keeping the facility clean and dry. At the beginng of the each shift, sanitize food contact surfaces with sanitizer.

Comments

- Handsink was maintained with hot & cold running water, liquid soap and paper towel
- >100ppm chlorine sanitizer present and in use
- Temperatures of all refrigeration units were adequate (<4C for fridges and <-18C for freezers)
- The operator has been recording temperatures of refrigeration units but have discontinued to do so recently. Monitoring of temperatures shall be implemented more consistently.
- Hot holding (soup) temperature was adequate (>60C)
- High temp. dishwasher achieved adequate sanitizing temperature at plate's surface (>71C)
- Storage of foods was adequate; no concerns of cross-contamination
- General sanitation was good
- Ensure to monitor for pest activities. Discard any foods that appear to be contaminated by pests.
