Code 302 noted on Routine inspection # MBEK-CG8V5Y of Jul-11-2022
Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. No sanitizer (chlorine) was detected in the rinse residual at the utensil surface for the low temperature mechanical dishwasher. Note: Dishwasher was run for three cycles.
2. One spray bottle of bleach water (chlorine) sanitizer was observed in kitchen; however, spray nozzle was not functional. No other surface sanitizer available. *CORRECTED*
Correction: 1. Ensure dishwasher is serviced so that it is in good working order and capable of properly sanitizing equipment, utensils, and food contact surfaces. Minimum required rinse residual is 50 ppm chlorine. All equipment, utensils, and food contact surfaces must be properly washed, rinsed, and sanitized to limit potential contamination of food. Date to be corrected by: July 12, 2022.
2. Two buckets of bleach water sanitizer were prepared at 100 to 200 ppm chlorine. Wiping cloths stored in buckets. Ensure surface sanitizer is always available at the correct concentration for effective sanitizing of food contact surfaces.
