Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Walk-in cooler and walk-in freezer were well organized.
Hot held foods were > 60 C.
Time stamps in use for condiments.
Temperature records were up to date.
The dishwasher had 100 ppm chlorine.
Quats sanitizer was at 200 ppm.
Peroxide sanitizer available for the front tables.
Test strips available for all types of sanitizer.
No evidence of pests. Pest control records available.
