- Premises still not in operation. Fire department requirements still outstanding. Minimal food on site. No food handling/preparation/processing taking place at time of inspection.
- All coolers 4C or less (sushi display case, undercounter, upright two door..etc)
- Upright one door freezer unit not turned on at time of inspection. No food inside. Ensure freezer is able to maintain -18C or less.
- No hot holding available at time of inspection.
- Handwash stations fully equipped (soap, paper towel and hot/cold running water)
- Good general sanitation. No obvious signs of pest infestation at time of inspection.
- Bleach available on site. Mix 2ml to 5ml bleach per liter of water to make 100ppm chlorine sanitizer solution and keep all wiping cloths stored in sanitizer solution.
- High temperature dish washer achieved 71C (as per thermolabel)
- Premises does not have an ice machine
