Observation (CORRECTED DURING INSPECTION): Cooked rice noodles stored at room temperature at 24C.
Corrective Action(s): Discard the cooked rice noodles. All cooked food items must be stored cold at < 4C or hot at >60C.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Ice scoop stored in bin directly touching a hot sauce squeeze bottle.
Corrective Action(s): Re wash and re sanitize ice scoop. Store the ice scoop in designated bin, not mixed with other items.

Observation: - Multiple food items (ie prawns) stored uncovered inside the coolers.
- Multiple food items (ie spring rolls) stored uncovered inside the freezers.
- Cooked chicken in the upper shelf above ready to eat vegetables inside the upright cooler (main kitchen).
Corrective Action(s): - Cover all food items with plastic wraps or in bins with tight fitting lids.
- Cooked/raw meats should be placed on the lower shelves inside the coolers to prevent any chance of cross contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Live cockroaches observed on shelving racks behind the dishwasher. Small droppings observed on shelves in the back dry storage area. Pest control inspection conducted on March 10, 2022.
Corrective Action(s): Immediately call pest control company for further assessment. Remove all foods in the areas noted above. Use bleach solution at 100ppm to sanitize all food contact surfaces. Do not attempt to use bug spray or other pesticides; call a professional pest control. All foods must be cleared away prior to any cleaning with chemicals. Obtain a copy of the pest control inspection report for review by the health inspector.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build of grease, food debris in the following areas:
- oil/grease on shelving racks behind the dishwasher
- underneath the two compartment sinks
- on shelves at the back dry storage area
- around the topping cooler
- inside/on sliding doors of the upright coolers.
- significant build up of dust/debris above the dry storage area (in ceiling area)
Corrective Action(s): Deep cleaning is required. This means removing all equipment/food/shelving racks away from the walls, cleaning hard to reach areas with appropriate cleaners/sanitizers. This will be checked during the next follow up inspection.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Thermometer inside the upright cooler with sliding doors seem to be broken (ie measured at 7-8C) while IR Thermometer gun indicates 3C.
Corrective Action(s): Replace all improperly working thermometers with NSF certified thermometers to monitor temperature.

Comments

- General sanitation needs improvement. See violation section above. .
- Handwashing station (front/back) supplied with hot/cold running water, soap, paper towels. Note: The paper towel dispensers (front/back) not dispensing properly. Dispensers may need to be replaced shortly. Do not place garbage bin or any other equipment in front of the main handwashing station.
- High temperature dishwasher achieved 72C at the plate's level during the final rinse cycle.
- Surface sanitizer available in white bucket (middle of kitchen) at 100ppm chlorine bleach concentration. Ensure to change out the sanitizer frequently.
- Dry storage area has adequate space and wire racks.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- All hot holding units (rice cookers) 74C.
- Daily temperature log available.

Please note: Current decal has expired.Once a valid decal (March 2023) is available, post it on your Operating Permit.
