Observation (CORRECTED DURING INSPECTION): Inserts in one of the prep coolers are being double stacked. This acts as an insulator and proper temperatures won't be maintained.
Corrective Action(s): As discussed, do not double stack pans.

Observation: The two main prep coolers were at 12 degC. Meats that had been in the inserts for longer than 2 hours were discarded.
Correction: Foods from the cooler that had just been prepared were relocated to another working cooler.
Comments

On Follow-Up:
-The two prep coolers have been serviced. Temperatures of the far side prep cooler is -2 degC; temperature of the middle prep cooler is 7.8 degC. As discussed, have the middle cooler looked at again. The temperature of the coolers should be below 4 degC. Operator called the technician during the inspection and he was on his way to re-service the middle cooler. Email me a work order.

AS DISCUSSED, DO NOT DOUBLE STACK PANS. FIND ANOTHER SOLUTION TO REMOVING THE PANS EASILY FROM THE TOP OF THE COOLER.
