Observation (CORRECTED DURING INSPECTION): Bean sprouts in water were at room temperature at 12C for half hour as per operator. Discussed with operator to add ice into the bucket to keep them cold but he did not have any ice. The bean sprouts were placed back into the fridge.

Observation (CORRECTED DURING INSPECTION): The high temperature dishwasher did not meet sanitizing requirement. Final rinse temperature at 68C (at the plate). Re-run at 74C (at the plate). Discussed with operator that a dishwasher safe thermometer (which he had) must be used to measure the final rinse temperature and must meet 71C or above at the plate.

Observation (CORRECTED DURING INSPECTION): 1. Food items (eg. chicken, noodles) in a metal bowl not covered in walk-in cooler and standing cooler.
2. Food items (eg. carrots) stored on top of newspaper in a plastic container.
3. Food stored in container that were not meant for re-use (eg. sauce)
4. Food stored in opened cans (tomato sauce)
5. Repeated violation: stacking of single-use containers.
Corrective Action(s): 1. Operator provided a cover for the foods mentioned when notified.
2. Carrots were discarded.

5. Cover the food with plastic wrap before stacking. Correction date: immediately.

Observation: The following area requires cleaning:
1. The fume hood is past due for cleaning (Nov 2018) and grease was noted.
2. The floor underneath the cooking appliances had black debris and grease.
3. The light and ceiling in the walk-in cooler had dust build-up.
Corrective Action(s): Remove debris clean and sanitize the areas noted above.
Correction date: 1 week.

Observation: 1. The faucet at the dishwashing/handwashing area was leaking.
2. The light in the small storage area off the kitchen was not working.
3. Freezer had broken lining plastic piece on the door. The temperature of the freezer was 0C to -4C.
Corrective Action(s): 1. and 2. Repair the items noted above.
3. Repair or replace the freezer so that the door is working properly to keep the temperature inside. Defrost the freezer. Also make sure not to keep too much food inside to allow air circulation.

General Comments:
-Handwashing station had hot and cold running water, liquid soap and paper towels
-All temperatures satisfactory:
1) Walk in cooler: 4C
2) Standing cooler: 4C
3) Rice cooker at >60C
-Sanitizer bucket at 200ppm
-No evidence of pests at time of inspection.
