306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) Minor amount of mouse droppings were noted on the floor of the room where the hot water tank is located. Limited to this area. Appears to be from past issues.
2) Shelving in food preparation area is cluttered with miscellaneous items including personal items, paper documents/records, supplies for repair of equipment, supplies which are no longer used. Dust also noted on surfaces of shelves.
Corrective Action(s): 1) Clean up mouse droppings and sanitize area. Monitor for any further activity. To be corrected by: 25-Dec-2023
2) Clean and organize all shelving in kitchen. Remove any items which are not required for the food business. Store tools and supplies for repair of equipment in a designated area. Store paper documents/records (only those for the food premises business) in a designated area. Store only minimal amount of personal items in a designated area away from food preparation space (eg in the staff washroom). To be corrected by: 18-Jan-2023

Observation: - 2 bus pans were noted to be worn with cracks and pieces of plastic missing. Operator reported bus pans are only used for cleaning and not food prep. Numerous bus pans which were good repair were noted to present.
Corrective Action(s): - Dispose of bus pans as they are not in good repair. Pieces of plastic which break off can create a physical contamination risk to food. Do not keep items which are broken and not in good repair. To be corrected by: 18-Dec-2023

Comments

- Dim sum items prepared at food premises and sold packaged and frozen from retail storefront. No food service.
Note: No food preparation was occurring at time of inspection
- Hot and cold running water was supplied to all sinks
- Handwashing sinks were supplied with liquid soap and paper towel
- Walk-in cooler 3C and supplied with a thermometer
- Raw meat was stored beneath/away from produce in the walk-in cooler
- Walk-in cooler -18C
- Retail freezer -19C (only one retail freezer currently in use)
- Operator knowledgeable about manual dishwashing steps. Plugs/stoppers present for sink. Bleach present for sanitizing step.
- Bleach sanitizer present in spray bottle. Concentration was initially >200ppm chlorine. Diluted to 200ppm chlorine at time of inspection.
- Meat grinder and components/attachments appeared clean and free from food debris.
- Food products stored off of the floor
- Pest proof bins in use for open packages of dry goods
- Screen door in place at back door to prevent pest entrance. Traps present for monitoring/control.
