206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Hot holding unit ranged from 35C to 45C and staff were putting cooked chicken into the hot holding unit.
Corrective Action(s): Hot holding unit must be above 60C prior to placing hot potentially hazardous foods in the hot hold unit. If the hot holding unit is not above 60C, hot foods will not maintain proper hot hold temperatures. Chicken was moved to the oven for hot holding at the time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): All 3 bleach sanitizer pails were greater than 200ppm. Chlorine test strips bleached out when testing sanitizer strength.
Corrective Action(s): Bleach sanitizer must be between 100ppm to 200ppm. Concentrations in excess of 200ppm may be toxic for human health. Sanitizer pails were emptied and bleach at 200ppm was prepared at the time of inspection.

Observation: Chicken pails and bus pan had chicken marinade all over the handles and outside of the containers.
Corrective Action(s): Ensure staff are adhering to proper hand hygiene practices and all equipment is maintained in a clean and sanitary condition. Containers with marinade all over the handles and outside of the containers may result in potential cross contamination. Review with staff proper sanitation and proper hand hygiene.

Comments

-Follow-up inspection to May 29, 2018.
-Chemical were properly labelled at the time of inspection.
-Did not observe any ants in the facility at the time of inspection.
-Prep cooler has been serviced and was at 1C.
*An entire tray of fried chicken and 7 containers of rice were stored in the hot holding unit. Staff and operator stated these items are for discard and inventory. Items for discard must be removed at the end of the night. If items are reused, they must be cooled properly and then reheated the next day.
Staff member on-site had FoodSafe Level 1 training. Staff member completed FoodSafe Level 1 course April 14, 2018.
