Inspections conducted for the 6 serving kitchens located in each of the 6 cottages in the building.
Each "cottage" kitchen is equipped with a high temperature dishwasher, a domestic upright cooler/freezer unit, and a 2 compartment ware washing sink. Food prep is limited at each of these kitchens, as food is mostly prepared from the main kitchen and then brought to each cottage kitchen to be served/dispensed.
All upright coolers in each of the kitchens were at <4 deg C
All upright freezers in each of the kitchens were at <-18 deg C
Dishwasher sanitizing temperatures were recorded for each kitchen (recorded inside dishwasher after rinse cycle, at the dish level):
1) Sunflower : 72 deg C
2) Lavender Way: 71 deg C
3) Poppy Place: 74.2 deg C
4) Pansy Lane: 77 deg C
5) Sweet Pea: 75.6 deg C
6) Rose Garden: 78.2 deg C
General sanitation in each of the kitchens is excellent
No signs of pests in the kitchens, foods are stored off the floor and covered in the cooler/freezer
Ensure that each kitchen has a quat spray sanitizer bottle at 200 ppm concentration for sanitizing of food contact surfaces (the same spray sanitizer available in the main kitchen)
