Observation (CORRECTED DURING INSPECTION): Dishwasher not functional at the time of inspection. Staff was not performing the sanitation step of manual dishware practices.
Corrective Action(s): Ensure to perform manual dishware washing in the following steps:

2. 1ST COMPARTMENT: SOAP/WATER
3. 2ND COMPARTMENT: WATER
4. 3RD COMPARTMENT: SANITIZE
5. AIR DRY.

Observation: High temperature dishwasher not working at the time of inspection.
Corrective Action(s): Operator aware of the issue and have attempted to service dishwasher on Jan 3rd. There is an issue with the pump which requires a new part. DO NOT USE dishwasher until it has been repaired and/or replaced so that it is able to produce at least 71C water on dish surface during the final rinse.
