Observation: (1) Walk-in cooler measured at 10C at time of inspection
Corrective Action: Operator was aware of issue and moved all potentially hazardous food items to other coolers that could maintain temperatures of 4C or below.
Maintenance person had been called before arrival of inspector. Walk-in cooler must be repaired to maintain 4C or below Do not store potentially hazardous food items in cooler until cooler is fixed

Comments

Observations:

All handsinks and washroom had hot/cold running water, liquid soap and single use paper towels.

Prep cooler measured at 23C. Inserts at top of cooler measured between 3-5C. at time of inspection
Thermometers available inside cooler.
Hot-holding unit measured at 57C. Operator indicated pizza is discarded after 2 hours.

Chlorine Sanitizer in labelled spray bottle measured at 200ppm.
Proper wash / rinse / sanitize procedures were reviewed for 3 compartment sink. Sink plugs are available

Proper Thawing of chicken in 3-compartment sink with running water was occuring at time of inspection.
Probe thermometer is used to measure temperature of fried chicken (74C)
Chest freezer measured at -18C

Food is properly stored and covered in prep cooler
All food and equipment is stored off the ground.

Sanitation of facility is very good
No signs of pests at time of inspection
Hood vents clean
Permit is posted and Food safety training is valid.
