302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Less than 200 ppm QUATS sanitizer was measured inside both sanitizer pails, one of the two sanitizer spray bottles, and from the dispenser. A hole was present in the hose connected to the QUATS sanitizer dispenser.
Corrective Action(s): Ensure all food contact surfaces are washed, rinsed, sanitized in 200 ppm QUATS sanitizer for at least 1 minute, and then air dried. Manufacturer's label directions for the QUATS sanitizer used on-site specify a 200 ppm active concentration and a minimal 1 minute contact time.

Staff manually diluted the QUATS sanitizer to setup 200 ppm in the sanitizer pails to sanitize surfaces and informed they would change the sanitizer every 2 hours. 200 ppm QUATS sanitizer was available from the dispenser upon adjusting the water temperature setting by the Manager who arrived later during the inspection.

Observation (CORRECTED DURING INSPECTION): Cell phone of a staff member was observed on the prep. surface of prep. cooler.
Corrective Action(s): Ensure cell phones are not stored on prep. surfaces to protect food from any potential contamination. Staff removed the cell phone and sanitized the prep. surface.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): Paper towel dispenser at the handsink near the 3-compartment sink was jammed at the time of inspection.
Corrective Action(s): Manager repaired the paper towel dispenser during the inspection. Ensure paper towel dispenser remains in good working order.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Floor tiles appear to be missing in certain areas of the food premises (e.g. floor gap behind the cook line, floor beneath and behind the dispensing equipment in the front service area). Floor liner is partly broken in the dry storage room near the walk-in-freezer. Several floor tiles appear broken throughout the food service establishment. This is a repeat violation.
Corrective Action(s): Flooring is required to be made of sealed, easy to clean, smooth, durable, nontoxic, and impermeable to moisture materials.

Ensure broken and missing floor tiles and floor liner is replaced with new intact floor tiles; Correct within 3 months. If renovations with a different flooring material are proposed, submit a finishes schedule to the Environmental Health Officer for review and health approval prior to making the changes to the floor plan.

Other handsinks were properly supplied.
Walk-in-cooler and other refrigeration units were at or below 4 degrees C.
Prep. cooler was equipped with a thermometer.
Walk-in-freezer, upright freezer, display freezer, and chest freezer were at or below -18 degrees C.
3-compartment sink was supplied with hot and cold running water. Sink plugs were available.
QUATS test strips were available on-site.
No signs of recent pest activity were observed at the time of inspection.
Staff member had valid FOODSAFE level 1 course training (SafeCheck Advanced Food Safety -Canadian Food Safety Group, expiration date: July 19, 2027).
