301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation:
Baffles of ventilation canopy full of debris, dust and grease.
Corrective Action(s):
Clean baffles of ventilation canopy. Ensure to clean the canopy on a regular basis to ensure the equipment is working properly and to prevent a fire hazard. To be corrected by September 29, 2022.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
1. Chlorine (bleach) sanitizer not readily available. Cook prepared sanitizer at the time of inspection.
2. Wire scrub and two SOS pads found with dish soap at the hand sink.
Corrective Action(s):
1. Ensure a 100-200 ppm concentration of chlorine (bleach) sanitizer is prepared daily and is readily available at all times of operation. To prepare this sanitizer, mix half teaspoon bleach in one litre of water.
2. Remove the dish soap, wire scrub and SOS pads from the hand sink. The hand sink is not to be used as a dishwashing sink. Dishwashing must be done in the dishwasher or by manual warewashing using the proper steps (wash, rinse, sanitize, air dry). The hand sink is only to be used to wash hands.

Observation:
Several food items in the walk-in cooler and in storage areas found to be uncovered.
Corrective Action(s):
Ensure to cover all food with a food grade container/plastic. All open bags (e.g. flour, sugar, spices) are to be transferred to a pest proof container with a lid.

304 - Premises not free of pests [s. 26(a)]
Observation:
Rat droppings found under dishwasher.
Corrective Action(s):
Clean droppings.
Clean and sanitize all food contact surfaces and equipment.
Contact pest control and provide a copy of the report to the Health Inspector.
Seal off all potential entry points.
Ensure to keep all food and dishes at least 6 inches (15cm off the floor).

Observation (CORRECTED DURING INSPECTION):
Back door observed to be wide open at the time of inspection.
Corrective Action(s):
Either keep the back door closed, or install a screen door with a secure mesh. Keeping the back door open without a screen door may allow pest entry very easily.

Observation:
Sanitation of facility requires improvement, especially in the following areas:
- Floor of walk-in cooler (including under shelves)
- Fan grates in walk-in cooler
- All shelves in the dishwashing room where dishes are stored. Organization of dishes in the dishwashing room storage also required.
- Floors and walls throughout kitchen
- Under all sinks and food prep areas
- All hard to reach areas
Corrective Action(s):
Thoroughly clean all areas listed above. Ensure to follow your sanitation plan for daily, weekly and monthly cleaning. The sanitation plan may be reviewed with the Operator at a later date.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
Caulking (silicone) deteriorating and full of mould at the following sinks:
- Right side of hand sink basin (against the wall).
- Left side of the pre-wash/soak sink in the dishwashing area (against the wall).
Corrective Action(s):
Replace the caulking at both sinks.

Routine Inspection:
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
Temperature of walk-in cooler = 3.8 degrees Celsius.
Temperature of stand-up freezer = -20.1 degrees Celsius.
Prep sink equipped with hot/cold running water.

In addition to the violations above, the following requires your attention:
Have a technician come in to service the dishwasher as it took 10 attempts before the dishwasher finally reached 71C at the plate level. If the dishwasher does not work properly, or if the wash and final rinse (santizing) cycles do not reach the proper temperatures, this could lead to an immediate closure.
