General observations:
Coolers in display and kitchen areas were 4 degrees C or less.
Freezers were -18 degrees C or less.
Hot holding units were over 60 degrees C.
Coolers and freezers equipped with thermometers.
Food storage and display practices are good.
Organization of storage areas is satisfactory.
General sanitation is satisfactory.
Premise is serviced by a professional pest control company on a monthly basis. Discussed with operator to ensure to maintain the back storage room in a clean manner and to use fly traps to control fruit flies.
Hand sinks are stocked with liquid soap and paper towels.
Food handler hygiene is good.
Quats sanitizer (spray bottles and 3-compartment sink): 200ppm

All chicken preparation/cooking equipment is sized appropriately to fit completely inside each compartment of the 3-compartment sink. However, the large wire rack used for cooling cooked chicken does not fit entirely in the sink compartments. In discussion with operator and staff, the wire rack is washed in the sinks but staff need to flip the rack over to ensure both ends are cleaned. Wire rack is rinsed with spray hose, and sanitized with quats sanitizer using a spray bottle. While the rack sits in the third sink to allow adequate contact time with quats sanitizer.
