A routine inspection was complete, the following observations were made:
- Coolers 4C or colder; freezers -21C or colder; hot holding units 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 74.6C at the plate's surface.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle and cloth bucket had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. The exhaust canopy is clean.
- Light bulb tubes have been installed on all light fixtures in food preparation and storage areas.
- No signs of pests. Some drain/fruit flies found in downstairs dry storage area. Inform your pest control company of these, so they can eliminate them.
- FoodSafe certified staff present.
- Flooring in cook area and waitress area has been repaired so it is durable, smooth, level, sealed and cleanable.
- Expansion of offices occurred downstairs, walls expanded out into the dry storage area. Ensure to seal the base of the walls and floors to prevent water and food debris from entering under the drywall. Recommend installing coving along the base of the wall to facilitate cleaning.
