Observation (CORRECTED DURING INSPECTION): 0 PPM chlorine residual detected in the 3 sanitizer spray bottles noted throughout the kitchen.
Corrective Action(s): Operator discarded the existing sanitizer spray bottles and remixed the solution. 200 PPM chlorine residual was detected in the remixed solution.

Observation: Missing light shields noted in the food preparation area by the dry storage room (across from the dishwashing area) and in the dishwashing area.
Corrective Action(s): Replace the missing light shields or purchase break-resistant LED lights on the two fixtures noted with the missing shields. All light fixtures that are noted over food storage or preparation area must be protected in the event that the light bulb bursts and glass shards get into the food products.

Observation: Debris and buildup noted in the following area:
1. Floor across from the keg cooler.
2. Around the server 2-door cooler.
3. Inside the deep fryer cabinet.
4. Floor around the dishwashing area.
Corrective Action(s): Clean and sanitize the aforementioned areas and maintain in a sanitary condition.

Observation: Newspapers were used to wrap cabbage in one of the upright refrigerators.
Corrective Action(s): Discard the newspaper noted in the upright refrigerator. Do not use materials that are non-food grade and cannot be washed for wrapping food products.

Observation: High temperature dish machine was unable to reach 71.0C at the plate level during the rinse cycle. Highest temperature attain was 36.5C. As per the operator, the dish machine has been unable to reach temperature for 3 days. They are in the process of replacing the dish machine.
Corrective Action(s): Operator was able to explain the procedure for using the 2-compartment sink for manual warewashing. Wash and rinse in the first compartment and sanitizing in the third compartment (2 tsp of bleach per 1 L of water) for at least one minute.

Routine inspection conducted today:
Handwash stations, including staff washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4C or below.
All freezer units were at -18C or below.
Rice was held hot over 60C in the rice cooker.
In general, proper storage hierarchy observed. Food stored protected.
Proper dispensers, with handles, were used for dispensing bulk food items. Did not observe handles being in contact with food.
No signs of pest activities noted during the inspection.
