Observation (CORRECTED DURING INSPECTION): Tongs for pretzels to put in to each bag stored in a container with bags; tongs had food debris on and the container was not cleaned and sanitized
Corrective Action(s): Required operator to replace tongs regularly (every 4 hours) with a clean pair of tongs

Observation (CORRECTED DURING INSPECTION): Discussed manual dishwashing methods discussed; operator did not have sanitizing step at the end. Wash and rinse then dried with paper towel. Sanitizing step must be included.
Corrective Action(s): Required operator to have one of three-compartment sink to have sanitizing solution at all times; concentration of detected chlorine must be 100-200 ppm. ensure to get test strips for testing
