205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Noted one display case cooler was at 12-14C. This display case cooler had mushrooms that were saran wrapped stored in it. This issue was noted on the previous report.
Corrective Action(s): Do not store saran wrapped mushrooms above 4C. Operator said he will have the cooler unit turned down.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer available in one spray bottle or in the bucket at the processing area. This is a repeat infraction. Only one spray bottle had sanitizer but the bottle was for another chemical (ie. not properly labelled). Noted knives being soaked a bucket with no sanitizer in the two compartment sink at time of inspection.
Corrective Action(s): Ensure sanitizer solution is made fresh daily and is readily available in labelled spray bottles and in a container with cloths submerged in the processing area. Ensure food equipment is properly warewashed and soaked in sanitizer solution before being air dried.

Observation: Noted container of bulk sun-dried tomatoes uncovered. Tongs were stored in the sun-dried tomatoes.
Corrective Action(s): Keep all foods covered and protected from contamination. Do not store tongs in the food.

Observation: Noted cardboard boxes being used as counters at the registers.
Corrective Action(s): Remove cardboard. Do not use cardboard as counter. Operator to install counter that is smooth, durable and washable if additional counter space is needed at the registers.

Observation: Unable to determine sanitizer bottles as they were not labelled. Spray bottle for a different chemical was being used to store sanitizer.
Corrective Action(s): Ensure all chemicals are properly labelled.

Comments

- Premises is a food store that sells produced and does some meat cutting/grinding.
- Walk in cooler unit with dairy and cheese, display case cooler unit with bean sprouts, display case cooler unit with raw meat and display case cooler unit with eggs and tofu all 4C or less. See violation code 205 re: wrapped mushrooms
- Freezers-18C or less
- General sanitation satisfactory. No obvious signs of pest activity noted at time of inspection.
- Hand wash stations had soap, paper towel, hot and cold running water. Paper towels were in holders.
- Bleach available on site. See violation code 302 re: sanitizer in spray bottles and buckets.
- Two sets of drain plugs available for each two compartment sink.
- Meat processing equipment appeared clean at time of inspection. Operator confirmed that they are taken apart and cleaned/sanitized after each use.
- Self closing door on washroom opening into processing area and lights over processing area had sleeves.
- All boxes and bags of foods stored off the ground on pallets.
** A follow up inspection will be conducted to verify correction of infractions.
