Routine inspection

Temperature controls:
Food in all coolers measured at or below 4 degree C. Separation of raw and cooked food observed.
Food in freezers measured at or below -18 degree C. Freezers are to be defrosted more frequently in order to rid of build up frost inside and be maintained.
Rice in hot holding measured at or above 60 degree C.
Dish washer final rinse water temperature registered at 74C.

Hand washing stations are maintained. One paper towel dispenser not properly functional, ensure to repair and maintain.

Structural:
Kitchen floor clean and maintained.
Counters show limited wear; repair necessary sections discussed.
Lighting in the kitchen was adequate.
Limit the use of cardboard as they absorb grease and dirt. Get rid of extra cardboard.

General sanitation:
Some build ups observed through out the kitchen. Ensure to clean and maintain.
Ice maker observed clean and maintained.
Customer washrooms maintained.
Bleach water used as sanitizer. 100-200 ppm chlorine residual detected in the solution. Bottles are properly labeled.
Food stored above the floor. Discussed cabbage boxes and storage.
Screen door installed at the back door to prevent pest entry.
No obvious sign of pest observed at this date.
Staff and operator are food safe trained.
FH Permit posted.
