Observation: 1. **REPEAT** Sanitizer for food contact surfaces is not available at front end of facility.
2. Sanitizer in kitchen area did not measure 100ppm at start of inspection
**Corrected during inspection** Operator remade sanitizer, though required a lot more bleach than normal.
3. Bottle of bleach may be old and is losing strength
4. High temperature dishwasher unavailable at start of inspection.
**Corrected during inspection** Staff turned dishwasher on.
Dishwasher must be turned on at start of shift so cleaning can be done throughout the day.

Follow-up inspection conducted in response to report #TCHN-CFMU5E

Sanitizer measured to be adequate levels at time of inspection. Operator aware of proper mix ratio of house hold bleach to water. Please ensure all staff understand how to properly mix bleach sanitizer solution.
High temperature dishwasher turned on by end of inspection; Operator considering purchasing additional mechanical dishwasher for facility. Please provide inspector the device specifications before purchasing; domestic dishwashers are not permitted in restaurant facilities.
All ingredient bins observed to be free of handle-less scoops
Black garbage bag no longer used to hold pizza pans
Dry storage area observed to be visibly cleaned. Operator is awaiting new shelving for dry storage to replace corrugated plastic sheets.
