Observation: Dishwasher final rinse temperature noted between 57 and 60 C. Must get to at least 71 C at plate. Indicating guages on machine display proper operating ranges for both wash and rinse cycles. Mineral diepsoits noted inside and may be affecting water flow.
Corrective Action(s): Have dishwasher technician called and have servicing completed. Make sure unit achieves and can maintain temperatures at least at 71 C at the plate at all times.
**As temporary measure all dishes go through manual sanitizing step implemented. Use one of the sinks with proper sanitizing solution as per dishwashing sign provided.
Follow up inspection required and date noted on report.

Observation: Minor to moderate volume of flies noted in kitchen. Sticky fly traps and light traps present with lots of flies stuck on them. Sticky traps are not allowed in or above food prep areas or areas where food or containers can be contaminated by the fecal matter of the flies above.
Corrective Action(s): Remove sticky traps as discussed. Add a directional fan to back garbage area door to help reduce volumes of flies, as they tend to come in via air currents. This door should also have a automatic closing device to minimize the amount of time this door is open.

Kitchen is well organized and very clean. Staff understand roles and responsibilities and track temperatures as discussed.
Handwash stations stocked;
Coolers below 4 C.
Freezers below minus 18 C.
Sink and surface used for hard surface sanitizing and measured at good range.
