Observation: During the cooking process on the iron grill, the same pair of tongs are used to handle raw and cooked meat products. To prevent contamination of food products, color coded designated tongs are to be used to handle cooked and uncooked foods.

Routine inspection conducted and the following were noted at the time of inspection:
Back stand-up coolers at 4C.
Back stand-up freezer at -18C.
Front prep-cooler at 4C.
Hot holding of rice products at 60C.
Food items stored at least 6 inches off the ground.
3 compartment sink satisfactory.
Chlorine sanitizer dispenser at 100ppm.
Low temperature chlorine dishwasher at 100ppm. Ensure chlorine test strips are used to test dishwasher daily to ensure it is in good working order.
Hand washing station satisfactory.
Ensure to keep a copy of staff's valid FOODSAFE Level 1 certification on-site.
