Build up of food debris in dry storage/spice storage room located under shelving and around food products.

Heavy oil build up located under oven (Rational), and on light shields of the range hood.
Corrective Action(s): Clean all identified areas. Areas should be cleaned regularly regardless of difficulty of reaching the area. Develop a cleaning checklist and schedule to ensure cleaners are cleaning areas.

Observation: 1. Handwashing station next to cooking line is not in working order. Pipe has been disconnected. Staff stated plumber has been contacted and will be visiting today to repair.
2. Water collecting in walk in cooler's light shield.
Corrective Action(s): 1. Ensure handwash station is fixed and in working condition. In meantime, handwashing station near dry storage can be used.
2. Remove water before it becomes hazard. Monitor light to ensure water does not build up

All products were either in original packaging or covered inside coolers.
Storage area was well-organized.
